This was one of my favorite meals as a child, and I have yet to make it homemade but this soggy sunday called for some warm food.

Ingredients are as follows:

  • 1/2 cup salted butter
  • 8 ounces mushrooms sliced
  • 1/3 cup all-purpose flour
  • 2cups chicken broth
  • 1 1/2 cups milk
  • 2 egg yolks
  • 1/3 cup heavy creamy
  • 1 cup frozen peas
  • 1 cup chopped drained pimientos
  • 4 cups chopped cooked chicken

Cook the chicken first, and then melt the butter and add the mushrooms. After sauteing them for 5 minutes add the flour and stir until all white specs are gone. Pour in chicken broth and add milk, bring to a boil then simmer for 3 minutes letting it thicken. If you want to thicken the sauce check out this link or watch the video below. Then it's time to add the chicken, frozen peas, pimientos and cook a few more minutes then serve over rice or noodles, and even toast.

This is one of those warm meals on a soggy Sunday.
