This was a recipe I was in need of a on a busy Saturday night. There are lots of meals you can make on a baking sheet which use very little dishes.

I am in the middle of moving and had a baking sheet and a few other things and this recipe was super easy.


  1. 4-6 Chicken thighs bone in skin and skin on
  2. olive oil
  3. seasonings of your choice
  4. lemon
  5. garlic
  6. potatoes chopped.

Preheat oven to 425 degrees. Mix all ingredients in a bowl and let all of the ingredients get coated with olive oil. Layout on a baking sheet and spread around making sure the skin is face up.

Cook for 35-45 minutes until potatoes are brown, and chicken is done. You can broil so skin is crispy if you want. Pretty easy recipe and not many dishes.
