If You Eat This On New Year’s Day, You’ll Have Good Luck
I lived in Texas for a long time, and southerners have a tradition of eating Black Eyed Peas on New Year's Day because they're supposed to bring good luck in the coming year. Even if you don't believe in that part, this dip is super tasty! Here's the recipe.
I call it Texas Caviar, but we can change the name to Idaho Caviar if you want. The recipe is pretty easy. It takes some chopping, but once you're past that you just throw all the canned things together and let it soak in the marinade. And then eat it with any chips, but Fritos are the best!
Texas-Idaho Caviar (Or maybe Tex-daho Dip)
1 can black eyed peas
1 can black beans
1 can pinto beans
1 can white sweet corn
1 small jar pimentos
2-3 diced jalepenos
1 cup green, red, yellow bell peppers (or whatever colors you want)
1 cup diced celery
1 red onion
Combine all of those ingredients in a container, and leave room for the marinade.
Bring these to a boil:
1 cup sugar
1/2 cup olive oil
3/4 cup cider vinegar
1 Tablespoon water
1 teaspoon salt
1/2 teaspoon pepper
After you bring those to a boil, let it cool and then pour over the veggies. Let the whole mixture cool for at least an hour, or overnight. Then drain off the marinade and serve with chips.
