Growing up the only food you could get from a truck was ice cream. A big musical truck would roll through the neighborhood alerting you with a creepy yet whimsical tune that ice cream was just a dollar away if you could catch it. Creamsicles were the way to go in my book with Strawberry Shortcake bars coming in at a close second. But the days of ice cream having a monopoly on trucks serving edible goodness are long gone.

Food trucks are everywhere these days. Tacos, macaroni and cheese, barbecue, empanadas, pizza, Hawaiian food-- there's a truck for everything. Boise even has a couple of food truck parks so we can find our favorites in one place. Green Acres Food Truck Park just opened earlier this month and The Switchback opened back in August of 2019. Every day there's a different line-up of trucks ready to serve you deliciousness. And hopefully one day this new food truck joins the rotation.

Oh Vegan Soul is joining the food truck game. It was announced on Facebook that the Vegan Soul Food Truck has officially passed all inspections and will be ready to debut in the next couple of weeks with a "special launch test" of their "awesome items." Up until now the way to get your hands on this scrumptious soul food was through online ordering and you'd pick up at pop-up locations. Most recently I did just that when they set up shop at Chow Public Market. (Highly recommend the ribs. Even an avid meat eater like my husband couldn't deny the vegan ribs were out of this world.) I'm looking forward to the launch of their food truck making cruelty free soul food more accessible to everyone in the Treasure Valley.
