Beer Can Chicken is weird and good, and we're kinda glad it's a thing, especially during the summer months.  And now instead of laboring out there by the hot grill, you can stay in the air-conditioned house and create the same thing in the Instant Pot. 

I love to cook, but I can't quite seem to master the grill.  My dad, on the other hand, is a grill master and as hard as I try to follow his steps and replicate exactly what he does, my stuff just doesn't turn out the same.  If there is an art to grilling, he's got the touch.  Are guys just better at grilling?  I'll let you settle that over some frosty beverages out in the backyard this summer.  Regardless of grilling skills, the Instant Pot recipe can make us all look like champs.

This version of Beer Can Chicken comes out in thirty minutes using the Instant Pot.  The hardest part of the whole process might be getting the chicken to fit in the pot, so don't get a huge bird.

I found this recipe on Mashed.com while I was looking for boozy creations for the Instant Pot (don't ask), and I thought it might be worth a try.  The only drawback to this process is that the skin may not turn out crispy, so you might want to stick it under the broiler for a few before you serve it.

Once you get the chicken seated on that beer can inside the pot, Mashed.com says to "add a cup of water and some veggies — chunked carrots, celery, and onion — then just cook on high pressure for 30 minutes. A natural pressure release later, and your beer can chicken is done." Easy breezy.

Beer can chicken has been a thing for years and might even have started here on a wild camping trip by accident.  Some well-meaning and slight inebriated Idahoan probably put the raw chicken down, couldn't find his beer, threw the chicken on the grill, and discovered the beer can later.  It's so good, right?  And now when it's hot outside and you don't feel like braving the heat by the grill, you take the process inside.  And stay, um...hydrated while you're at. it.
