Twist Recipe On Pumpkin Pie
I love Pumpkin Pie but I have a few friends that just hate pie. So for you Pumpkin lovers out there that want something different than pie this Thanksgiving here's a recipe for Pumpkin Cake.
Ingredients;
3 cups unsifted flour 3/4 cup vegetable oil
2 cups sugar 1/3 cup apple or orange juice
4 teaspoons baking powder 4 large eggs
2 teaspoons cinnamon 2 teaspoons vanilla extract
1 teaspoon nutmeg 1/2 cup coarsely chopped walnuts (optional)
1/4 teaspoon salt 1/2 dark seedless raisins (optional)
1 16oz can pumpkin confectioners sugar
Prep;
Preheat oven to 350. Grease and flour a 10 inch bunt pan
Directions;
In a large mixing bowl combine flour, sugar, baking powder, cinnamon, nutmeg and salt.
In a small bowl beat together pumpkin, vegetable oil, juice, eggs & vanilla.
Slowly stir pumpkin mixture into flour mixture until well combined. Then fold in nuts & raisins.
Pour cake contents into bunt pan and bake for 55 - 60 minutes.
Once cooked turn cake out of the pan onto a platter. Sprinkle with confectioners sugar & serve.
