What's the one go-to food that identifies Idaho -- that one food that out-of-state guests just have to eat while they're here?  One blogger broke it down by state, and picked a Boise restaurant to represent Idaho.

I would have thought salmon should rank high, but Thrillist picked the beloved spud to represent Idaho.  Of course!  We do love our potatoes.  French fries are the "Best Thing to Eat in Idaho," according to the blog, and the restaurant with the best fries is a Boise favorite that uses local and organic ingredients.

Boise Fry Company's bison burger was named best in the state awhile back, and now the fries get their time in the spotlight too.  The blogger picked the fries not only for the taste, but because you can customize by potato type (sweet, purple, gold) when you order, and you can pick the cut too.  If waffle or shoestring is your thing you can get it, or have the spuds shaped into balls.  And then smother the fries in blueberry ketchup if you want.

Thrillist says the best of Oregon is Tuna Mignon, and in Washington it's the Dungeness Crab Cake.  Even better with fries, I'm sure.
